This magical root is having it’s moment and for good reason. Turmeric has been an integral part of Indian, Asian, and African cuisine for thousands of years, but recently it’s being touted for numerous health benefits. Turmeric possesses powerful anti-inflammatory properties, which help with everything from joint pain, to osteoarthritis and Crohn’s Disease. In addition, it aids with digestion, and helps to curb heartburn, stomach pain, and a host of other aliments.
Since I was a kid, whenever I had a stomach ache my mom made tea with ginger and turmeric to settle my stomach. Nowadays, I’ve sexy-ed up the ways I incorporate turmeric into my diet, and I have the yellow stained fingertips to prove it. I've included two really awesome recipes; Turmeric Tea, and Turmeric Roasted Chicken, with the hopes that you try them out for yourself.
Turmeric Spiced Tea
1 cup unsweetened coconut milk or almond milk
1 cup water
1 (3-inch) cinnamon stick
1 (1-inch) piece turmeric, unpeeled, thinly sliced, or 1/2 teaspoon dried turmeric
1 (1/2-inch) piece ginger, unpeeled, thinly sliced
1 tbsp. honey
1 tbsp. virgin coconut oil
1/4 tsp. whole black peppercorns
Ground cinnamon (for serving)
Whisk coconut milk, cinnamon, turmeric, ginger, honey, coconut oil, peppercorns, and 1 cup water in a small saucepan; bring to a low boil. Reduce heat and simmer until flavors have melded, about 10 minutes. Strain through a fine-mesh sieve into mugs and top with a dash of cinnamon.
Turmeric Roasted Chicken
One 4 pound chicken; backbone removed
Freshly ground pepper
2 tbsp. ghee
2 tsp. ground turmeric
1 tbsp. grated ginger
1 tsp. garlic powder
2 tsp. curry powder
1/2 tsp. ground cinnamon
1/2 tsp. ground cumin
Season chicken with salt and pepper. Melt ghee in a sauce pan over low heat and add all spices, and ginger. Stir until fragrant and remove from heat. Once cooled, rub spice mixture all over the chicken. Refrigerate for an hour. Wipe off excess spice rub and roast chicken in oven at 400 for 45 to an hour. Make sure that the skin on both sides are crispy and golden brown. Remove from oven, let rest for 20 minutes. Cut up and serve.
